The Craft

Japanese mastery, one Himalayan accent. bh;kjoi

We do not fuse two cuisines equally. We practice Japanese discipline, then let a single Himalayan note change the conversation.

A Family Restaurant

A family that carried a mountain across two continents.

Snow Lion began with a single family from the highlands of Tibet. Forced to leave their home, they carried only what could not be taken — a memory of the Himalayas, and the will to feed people well.

In Japan they learned the discipline of the knife: years at the counter, the patience of rice, the silence of focus. Then they travelled west and made their home in Strasbourg, where the Rhine has always been a crossing point between worlds.

Today the parents run the counter while their children learn it, plate by plate — East meeting West, Tibet meeting Japan, finished with a European hand.

The Snow Lion family behind the sushi counter in Strasbourg

The family behind the counter.

Mother, father, and the next generation — three generations of hands, one counter. Every plate carries the journey from the Himalayas to the Rhine.

Why Snow Lion

Tradition over novelty.

The snow lion is the guardian of the Himalayas. Here, it watches over an unlikely kitchen.

01

Rooted

Our chefs trained for a decade in Tokyo. Our Tibetan pantry comes from family recipes in the Kham region.

02

Restrained

We do not crowd a roll. One accented ingredient, one sauce, one temperature contrast. Then we stop.

03

Immersive

Dining here is slow: warm light, a tea pairing, and service that reads the table.
